Wrapped in single wax paper in food grade cardboard boxes.
Large cheese; two to an inner, twelve to an outer.
Large cheese; also available in individual white cardboard boxes.
Small cheeses; six to an inner, thirty six to outer

Storage and Shelf Life
Store at 4-6 degrees CelsiusStore at 4-6 degrees Celsius.
Shelf life from dispatch from dairy;
60 days for small cheeses.
90 days for large cheeses.

After opening the cheese should remain in good condition for up to 3 weeks if handled correctly.

Flavour, Odour and Appearance
Flesh is pale coloured with pinkish, yellow, grey rindMild and creamy with a deep after taste when young,
stronger and fruitier flavour when mature.
Mild to strong odour depending on maturity.
Flesh is pale coloured with pinkish, yellow, grey rind.

Rind
Washed Rind which develops naturally whilst the cheese
is being matured in our curing room.
When young, the rind is creamy to pink; colours deepen as the cheese ages.

Packing the CheesesDurrus Farmhouse Cheese is produced in a registered dairy(IRL 1802 EC) and in compliance with the following quality standards.

The cheese is regularly tested for compliance by the Department of Agriculture who additionally audit the dairy premises and the HACCP thrice yearly. West Cork Fuchsia Brands audit the dairy and its environment annually.

Additionally we test on a weekly basis with an accredited,independent laboratory a composite sample of the cheese for compliance with EU 92/46 and SI 9.1996

Quality of Milk and its Provenance
Local FriesiansThe winter and 90% of the summer milk is independently sourced from a closed and registered herd which has provided Durrus Cheese with milk since 1988.

A herd with similar status provides additional summer milk and both provide monthly documentation to their milk quality. They are both authorised by the Department of Agriculture to supply raw milk.
